A buyer's guide to recipe yield, allergens, preparation, packaging and menu testing.
Begin with the finished drink
A product name such as matcha latte, taro latte, chocolate or fruit tea does not define a recipe. Tell the supplier the serving size, hot or cold application, water or milk base, sweetness target and equipment used. Request the recommended dose in grams and test it under normal service conditions.
Calculate cost per prepared serving, not price per kilogram. Include powder dose, milk or water, ice, toppings, waste and cup size. A cheaper powder can cost more if it needs a larger dose or creates inconsistent drinks.
Read the specification and label
Ask for the full ingredient list, nutrition declaration, allergen statement, country of origin, net weight, batch coding and shelf life. Confirm whether milk, soy, gluten-containing cereals, nuts or other regulated allergens are present, and assess cross-contact statements for the destination market. Health claims such as supporting metabolism or providing natural energy require legal and scientific review and should not be copied from a sales sheet.
Check caffeine where tea, coffee, cocoa or matcha is used. If the menu describes a drink as caffeine-free, the claim must match the formula and local rules. Also confirm permitted colors, flavors, sweeteners and additives in the importing country.
Test operations before launch
Run a small trial using the staff, water, equipment and service times of the actual outlet. Record dissolution, clumping, foam, color, taste, residue and holding stability. Test both the supplier recipe and the recipe that meets your cost and flavor target.
For purchasing, specify pack size, inner liner, carton count, minimum order quantity, production lead time and remaining shelf life at dispatch. Private-label projects also need approved artwork, barcode, language, nutrition panel and allergen review before printing.
